WHAT MAKES JAMON IBERICO SPECIAL?

To be called "Jamon Iberico" it must be from black iberian pigs and raised in Portugal or Spain.

This is particular jam comes from white pigs that are free range and fed on a grass and grain based diet.

Many producers produce Jamon Iberico from pigs who live indoors most of their life. This is NOT the case. These jams come from pigs who roam freely their whole life and are fed a diet of grass and grain.

Do you wonder if it is worth the price? Yes!

I want to give you a full depth review on this cut providing you with the good and the bad. I have no relation to Meat n Bone other than being a customer (and the love of good food!).

The first time I heard of Secreto Iberico was on several YouTube channels and was very curious about it, I finally found it on Meat n Bone.

When you open the package the first impression is that is does NOT have a strong pork smell, as matter of fact you sense no smell at all until you get your nose very close and it is then that you will experience a very subtly prosciutto like smell.

The texture is very delicate with a beautiful marbling and the fat is soft almost melting on your fingers, I decided to trim some of the excess fat and to my surprise I end up trimming in weight about 25 percent of the cut (see photos).

I seasoned it with Maldon Salt and black pepper, vacuum seal it and cook it Sous Vide for 3 hours at 134 F. and finished it by searing it using a Searzall.

Once cooked and seared it does not look like pork at all, as matter of fact it looks like steak!, and the surprise is waiting for you once you try it… it does not taste like steak, it does not taste like pork, its flavor is unique, very delicate, texture is very soft, overall it is just amazing!

Starting at that moment this cut is one of my favorites and have bought it 3 more times since then.

Is it good? Yes, it is. Is it worth the price? Yes, it is (in my opinion).
