Description of Premium Whole Pig | Heritage

Our hogs come with the head-on and unsplit. They start at an average of 60 lbs (Feeds 35-40 people) and will require a lead time of a week. Looking to roast a whole hog? Caja China style? This is what you are looking for.

It comes gutted and clean, un-split means if you want them to lay flat on the table you will need to do a little bit of work. A hacksaw or hammer will do. Note, this is how everyone sells them locally..

We do not accept returns or cancellations on whole heritage pigs. We do not usually keep pigs in stock. All pigs require a lead time of a week.

WHY CANT YOU SOURCE PIGS FASTER LIKE YOU DO EVERYTHING ELSE?

We stopped selling pigs a while ago. Why? Most pigs in South Florida come from one processing facility and from the same couple of farms. They are not up to our standards for a myriad of reasons. So we source them from far away, specifically from one farm in Iowa... and we source them fresh so it takes a while to get here.

HOW MUCH PIG DO YOU NEED?

A good rule of thumb is to order two pounds per person raw because you'll get about one pound of succulent, juicy meat. Most people will not eat more than 1/2 pound so you'll have plenty of leftovers guests can take home.

Never roasted a suckling pig??? Here's how to do it.

    WHAT MAKES YOUR HOGS SPECIAL?

All of our hogs are raised humanely, the process is completely natural. Just like our suckling pigs, our pigs are not inseminated; they mate naturally. The boars have individual spacious pens and the sows, once pregnant, are placed together in groups of approximately 10 in extra-large pens. They have lots of space to move around and have easy access to their food during their gestation period.

The breed is DUROC, they are red pigs with drooping ears. They are the second most recorded breed of swine in the US today and a major breed in many other countries. They can range from a very light golden, almost yellow color, to a very dark red color that approaches mahogany.

Delivered cleaned (degutted), eviscerated, and trussed (Ribs are not completely cracked open). We will not process the pigs any differently and do not do special requests.

We have smaller suckling pigs for sale that weigh less than 15 lbs.

    DO YOU SHIP?

Given the size and weight of the boxes, we cannot ship anything larger than a 30-50# pig. However, those will not be available yet. So for now, we only deliver or sell for pick-up at our boutiques.
