Description of Whole Prime Rib Bone-In | Wagyu BMS 6-7

The Prime Rib primal cut is where we find the most tender, flavorful and desirable steaks in a steer/cow. In layman's words, the Prime Rib is where the flavor is at. The Prime Rib is the undisputed KING of large cuts of beef. 

Prime Rib is consumed heavily around holidays, but its an extremely versatile cut of beef and can be cooked in many different ways.  More importantly, Prime Rib is the most eye-catching, mouth-watering piece of beef you can serve a guest. 

The Prime Rib is basically the "whole" rib eye muscle, which is a muscle that doesn't get much exercise, so it yields some of the tenderest meat. It can develop excellent marbling. 

One of the reasons Prime Rib is such a popular holiday dish is that it has generous servings.

Prime Rib does need to be marinated, simply because its a very thick cut of beef. After that, whether you prefer to grill it or roast it, its up to you. Both will be extremely tasty.

BMS6-7? TELL ME MORE!

Given the crazy prices of the market we reached out to a small but excellent Wagyu Farm in the state of Texas and negotiated having their Prime Ribs for the holidays. They raise what they call "Grand Master Steers", these are Akaushi Wagyu that grade BMS6+.

These steers are fed on a controlled diet and roam freely. They are raised on grass and finished on grain. Once processed, they are wet aged for 30-35 days to add even more tenderness.

HOW DO I COOK IT?

Cooking a Prime Rib is a lot less intimidating than you think. In fact, it may be the easiest roast to cook.

Outstanding!

The prime rib arrived beautifully packed. I prepped by frenching and cutting ribs off and cooking via sous vide. Ribs 24 hours and meat only section for 9 hours - all at 133 degrees. They were trussed together and seared at 475 degrees with a herbed butter rub for 20 minutes. Everyone raved it was best Prime Rib they’d ever eaten.
