Whole Striploin (NY) | USDA Prime

The Striploin is the source of the New York strip, one of the most highly prized steaks. Our USDA Prime G1 MidWestern NY Striploins present excellent marbling. We do not trim this cut and leave it up to you to decide exactly how you want it as this is a roast that is very easy to custom cut.
The Striploin contains fat in levels that are somewhat in between the tenderloin (virtually none) and the ribeye (plenty of good, melty fat), and has flavors and textures that are more uniform throughout, unlike the ribeye which has varying textures.
The best thing about buying the Striploin is that you can create cuts of several thickness. For example, an awesome 2'' inch New York Strip and some very fine strips for a cool sandwich.
The average Striploin weights 12-14 Lbs.

Very impressed
I have only broken this down so far, but I got 9 3/4 lb steaks and a nice roast. The steaks are well marbled and I can't wait to cook a couple of steaks.

Prime NY striploin
Hard to find whole cuts of either Loin or Ribeye in the national mail order steak market. I like to cut it thick but even Omaha Steaks dont do whole.
