This New York Strip has a particularly beefy MidWestern flavor and a good amount of marbling. Its sourced from Ferry Farms and is a bit more rudimentary cut compared to our offerings which are perfectly cut. This particular strip is only 4oz (half a portion) which makes it great for trying it out
The NY Strip Steak contains fat in levels that are somewhat in between the tenderloin (virtually none) and the ribeye (plenty of good, melty fat), and has flavors and textures that are more uniform throughout, unlike the ribeye which has varying textures.
The strip is cut from the short loin, from a muscle that does little work, like the filet.
Best Cooked: Medium-Rare, Medium, Medium-Well

Ferry Farms is a Michigan centennial farm owned and operated by the Ferrys since 1906. They are the EXCLUSIVE provider for the Private Reserve beef, which you can ONLY find at Meat N' Bone.
For us, this is what Meat is supposed to taste like. Our Premium Reserve is not as perfectly cut as our USDA Prime or USDA Choice beef, in fact the steaks will vary in size... Its more... rudimentary. But so its the flavor. You can taste Michigan in the beef.
