Boschetto is an aged pecorino cheese with walnut leaves. It is a semi-soft cheese made from a combination of a cow's and sheep's milk. A true delicacy that is infused with shavings of highly-prized rare white truffles that lend an earthy, luxurious and robust aroma and flavor to the cheese.
The cheese is a perfect marriage of the pungent taste of the kingly fungus and delicate, sweet taste.
This cheese is make by the Il Forteto cooperative, in in the municipal district of Barberino di Mugello, Florence (Italy). Today, there is a hotel "Casa Verragoli" where you can do agricultural tourism and see how this award-winning cheese is made.
Ingredients: Pasteurized sheep's and cow's milk, salt, white truffle (min 0,1%), rennet, lactic ferments. Rind edible.
