The Veal Loin Medallion is one of the most refined cuts in the butcher's case — tender, delicate, and exceptionally clean in flavor. Cut from the loin of young calves raised on a milk-and-grain diet, veal delivers a texture and subtlety that mature beef simply cannot replicate.
Veal is naturally and legally hormone-free, and a natural by-product of the dairy industry. Calves are raised with care and processed young — typically between 10 and 12 months — before the muscle fibers develop the density and stronger flavor of adult beef. The result is a cut with a pale, fine-grained texture, a mild and clean taste, and a tenderness that responds beautifully to precise, attentive cooking.
Why the loin medallion: Portioned from the loin — one of the least-worked muscles on the animal — these medallions are exceptionally tender with virtually no connective tissue. They cook quickly and evenly, making them ideal for pan-searing, sautéing, or finishing in a light pan sauce. This is the cut that anchors classic veal dishes in French and Italian fine dining for a reason.
How to cook it: Season simply with salt and white pepper. Sear in a hot pan with butter and a touch of olive oil for 2–3 minutes per side until golden. Finish with a classic pan sauce — lemon and capers, a light cream reduction, or a simple herb butter. Veal rewards restraint and technique over heavy seasoning. Let the cut do the work.
