Pickled or slowly braised, beef tongue is a classic eastern European delicacy. Cow tongue meat/lengua meat is also the star of the popular Mexican dish, 'tacos de lengua' (tongue tacos).
Tongue meat is rich in calories and fatty acids, as well as zinc, iron, choline, and vitamin B12. as well as folate; the vitamin in organ meats considered beneficial for fertility.
