This is a beautiful and high quality pork butt. Injected with peach brine and rubbed, smoked over peach and white oak for 12 hours. Absolutely superb! Will be ordering many more times!
I am Italian from Calabria. The region specializes in making sausage and cured meats. My family has been making sausages from generation to generation. By far this is hands down the best pork butt that I have used since my Dad use to make them when I was little. The flavor is amazing and the fat to meat ratio was perfect. When it comes to pork shoulders, I usually opt for store bought (Costco, Meijer, Jewel). However, since I have had such good experiences from this company, I decide to shell out for their pork shoulder. When I prepped the shoulder, I knew right away that it was really high quality; which was proven when I made a pulled pork sandwiches. The pork had a really good, clean taste, along with good marbling which rendered into the meat. It took hours to smoke, but was worth the wait. I will definitely buy another.
I always get the shoulder and never disappoints. Definitely would recommend for smoked pulled pork.
