The Cut & The Craft

Pork belly is the section of flesh that runs along the underside of the hog, surrounding the stomach. It is a natural, un-fabricated cut pulled directly from the animal. We square it off for a uniform shape and divide the full belly into manageable retail-friendly pieces, but we never trim away the meat or the fat cap. This ensures you get the full, rich experience of heritage pork, where the fat is worked into the meat rather than sitting on top of it.

    Ended good!

    The Christmas meal was delicious. The meat was top notch, and all guests were raving about it. I loved it as well, but missed the "Scandinavian touch" (the ribs), and of course the meat had more fat to it then I am used to. The crackling of the skin (rind) succeeded just half... , but no other to blame than me myself - or the oven... It crackled most in back of oven than front, so turned the cooking tray trying to even it out. Here the meat peeking in the oven.

    Great cut, skin perfect, almost no butchery needed!

    Awesome, will definitely be ordering again. Got this pork belly with the skin on after watching Chud's BBQ channel on youtube and seeing him do it on his pellet grill, I knew I had to try it on my offset. 10/10, would highly recommend!

    The real deal pork belly with skin

    Got a 4lbs slab. Cut into 4 pieces for 2 people each piece.

    It cooked well and the skin turned out nicely crisped.

    A bit of fat to remove on the outside before cooking and some when cooked from the slices.

    Disappointed this time

    I’ve ordered the heritage pork belly twice before, and they were good. This time, there was too much fat. The 5-lb piece I got was just under 3 lbs after I trimmed the pure fat (which I salvaged by rendering for lard). My final crispy roast pork belly had good flavor, with crispy skin, but was disappointingly small for a special occasion.

    Delicious! Made Porchetta

    The pork belly I received was evenly cut and well trimmed. I made a porchetta with it and cooked it rotisserie style in my kamado grill. It came out beautifully with a crispy skin and nice velvety soft interior, full of juice and flavor. I can’t recommend this product enough.
