This 3lb shoulder was perfect. I salt dry brined it for 24 hours then added olive oil and herbs before smoking it at 250 for several hours. Tender not dry. There is indeed a difference in flavor of American lamb versus Australian. It was less gamey. I appreciate the promptness of the delivery as well. Here is a post cook pic.

The roast came promptly and was delivered still frozen. We had the lamb shoulder for Easter. It was a little dry, no doubt from the way I cooked it. However, that doesn't mean I won't order it again. I'll be anxious to try the ham I couldn't get in time for Easter and some other products!

I can't find lamb shoulder anywhere but Meat and Bone has it! I cooked it for 5 hours over a bed of fennel and oranges and it was meltingly tender and flavorful. I can't wait to see what else Meat and Bone has in store for me!!
