DESCRIPTION

American Lamb Shoulder | Boned, Rolled & Tied

Our Domestic Lamb Shoulder is a butcher’s classic, carefully prepared to ensure an unbeatable dining experience. Sourced from American family farms, this cut is grain-finished to develop rich marbling, resulting in a mild, buttery flavor and exceptional tenderness that sets it apart from imported, grass-fed alternatives.

Expertly boned, rolled, and tied (BRT) by our butchers, this roast is ready for the oven or slow cooker. The BRT preparation ensures even cooking, easy carving, and maximum juiciness, allowing you to cook like a pro with no extra prep required.

Sourcing & Quality

We partner with trusted family farms across the United States that prioritize animal welfare and sustainable practices. Our American lamb is:

  • Grain-Finished: Developed for superior marbling and a mild, approachable flavor.
  • Hormone-Free: Raised without artificial growth hormones or animal by-products.
  • USDA-Inspected: Hand-selected for proper finish, weight, and age.

Unlike imported lamb, which is often a by-product of the wool industry, our domestic lamb is raised specifically for consumption, ensuring a premium eating experience every time.

Cooking Inspiration

  • Braising Perfection: Low and slow is the secret. When braised gently, the fat renders down beautifully, leaving the meat fork-tender and juicy. Skim off any excess fat after cooking for a clean, flavorful sauce.
  • Roast it Whole: A Sunday roast centerpiece that delivers bold flavor and succulent texture. Pair with rosemary, garlic, and root vegetables for a classic preparation.
  • Pulled Lamb: After slow-cooking, shred the shoulder for sandwiches, tacos, or Mediterranean wraps. Comfort food meets gourmet versatility.

Pro Tip: Don’t rush the cooking process. Lamb shoulder shines when given time to break down and release its natural richness. Cook at a steady, moderate heat to ensure the fat melts away slowly, infusing the meat with flavor.

Why You’ll Love It

  • Expertly prepped by butchers — ready to cook
  • Rich, mild flavor perfect for braises, roasts, or pulled lamb
  • Sourced from American family farms with a focus on quality and sustainability

Frequently Asked Questions

What does "Boned, Rolled, and Tied" (BRT) mean?

BRT is a butcher's technique where the bone is removed, the meat is rolled into a uniform shape, and tied with butcher's twine. This ensures the roast cooks evenly, is easier to carve, and retains its juiciness.

How does American lamb differ from imported lamb?

American lamb is typically grain-finished, which creates more marbling and a milder, buttery flavor. Imported lamb is often grass-fed and can have a stronger, "gamy" taste. Our domestic lamb is also raised specifically for meat quality, whereas imported lamb is often a by-product of the wool industry.

Is this lamb hormone-free?

Yes. All American lamb sourced by Meat N' Bone is raised without artificial growth hormones or animal by-products.

What is the best way to cook a lamb shoulder?

Lamb shoulder is a tough cut that benefits from low-and-slow cooking methods. It is ideal for braising, slow-roasting, or using in a slow cooker. This allows the connective tissue to break down, resulting in fork-tender meat.

How should I store my lamb shoulder?

Keep the lamb shoulder refrigerated until you are ready to cook it. If you are not using it within a few days, you can freeze it. For best results, thaw frozen lamb in the refrigerator for 24–48 hours before cooking.

Will this item arrive frozen?

This item may be delivered frozen or partially frozen depending on transit time and weather. This is a standard safety measure to ensure the product arrives in perfect condition. You can cook it from frozen (adjusting cooking time) or thaw it in the refrigerator.

    Great Grind

Lamb arrived as expected. Ground some of it with sweet cherries for some unique lamb burgers. Very tasty. Also formed several 6 oz patties for the freezer, one a week for the whole summer.

    Smoked Shoulder

This 3lb shoulder was perfect. I salt dry brined it for 24 hours then added olive oil and herbs before smoking it at 250 for several hours. Tender not dry. There is indeed a difference in flavor of American lamb versus Australian. It was less gamey. I appreciate the promptness of the delivery as well. Here is a post cook pic.

    Lamb Shoulder

The roast came promptly and was delivered still frozen. We had the lamb shoulder for Easter. It was a little dry, no doubt from the way I cooked it. However, that doesn't mean I won't order it again. I'll be anxious to try the ham I couldn't get in time for Easter and some other products!
