DESCRIPTION

Known in the southern hemisphere as Entraña, the Outside Skirt Steak is widely considered the most flavorful cut of beef in a steer. While traditional skirt steak is often dismissed for its toughness, our Wagyu-Angus cross transforms this cut into a tender, buttery experience without sacrificing its signature bold, beefy depth.

Sourced from award-winning Australian ranches, this Wagyu BMS+6 skirt steak presents significantly more marbling (intramuscular fat) than standard USDA Prime options. This intense marbling renders during cooking, creating a crisp, crunchy sear on the outside while keeping the interior incredibly juicy and rare-to-medium. It is the perfect choice for high-heat grilling, delivering a melt-in-your-mouth texture that elevates everything from weekend carne asada to elegant dinner parties.

Sourcing & Quality

Our Wagyu-Angus cross is carefully selected from trusted partners in Australia. The Wagyu breed contributes a distinct, rich flavor profile and exceptional tenderness, while the Angus genetics provide the robust beefiness skirt steak is famous for. Each steak is hand-trimmed to ensure you receive a premium cut ready for the grill.

Cooking Recommendations

  • Best For: Grilling, high-heat searing, and carne asada.
  • Best Cooked: Medium-Rare to Medium.
  • Technique: Cook in extremely hot heat to achieve a crisp, "crunchy" exterior while maintaining a rare-to-medium interior. We recommend 3 minutes per side maximum for optimal tenderness.

Why Weight Ranges?

Outside Skirt is a premium cut that requires careful handling. To keep prices accessible, we sell these steaks in weight ranges (e.g., 1–1.4 lbs) and charge you for the lower end of the range. This means if you order a 1–1.4 lb skirt, you are only charged for 1 lb, even if your steak weighs up to 1.4 lbs. This approach allows us to pass the savings on to you while maintaining the highest quality standards.

Frequently Asked Questions

What makes Wagyu BMS+6 different from USDA Prime skirt steak?

Wagyu BMS+6 features a higher Beef Marbling Score than USDA Prime, resulting in more intramuscular fat. This creates a buttery, melt-in-your-mouth texture and richer flavor that standard skirt steak cannot match.

How should I store this steak upon arrival?

If you plan to cook it within 1–2 days, keep it refrigerated in its vacuum-sealed packaging. For longer storage, freeze it immediately. Thaw in the refrigerator for 24–48 hours before cooking.

Is this steak suitable for carne asada?

Absolutely. The intense marbling and bold flavor make it an exceptional choice for carne asada tacos. Many customers report it is the best carne asada they have ever had.

Where is this beef sourced from?

This Wagyu-Angus cross is sourced from trusted, award-winning ranches in Australia, known for their high-quality beef programs and responsible farming practices.

Why does the steak look dark when I open the package?

Vacuum-sealed beef often appears darker due to the lack of oxygen. This is normal. Once exposed to air, the meat will "bloom" back to its natural bright red color within 15–30 minutes.

What is the best way to season this cut?

Because of its rich flavor, simple seasoning works best. We recommend coarse sea salt and freshly cracked black pepper. A chimichurri or citrus-based marinade also pairs beautifully with the beefy notes.

How does the weight-based pricing work?

We charge you for the minimum weight in the range. For example, in a 1–1.4 lb range, you pay for 1 lb. If your steak weighs 1.3 lbs, you still only pay for 1 lb, giving you extra value.

Can I cook this steak in a pan?

Yes, but a cast-iron skillet is recommended to achieve the high heat necessary for a proper sear. Ensure your pan is smoking hot before adding the steak to get that signature crisp exterior.

Exceptional quality from start to finish!

The quality of the meat was outstanding. It had beautiful marbling, incredible tenderness, and rich, beefy flavor without being overly fatty. It cooked perfectly, developed an amazing crust, and stayed incredibly juicy. Every bite was packed with flavor, and it made some of the best carne asada tacos I’ve ever had.

I highly recommend the Wagyu Outside Skirt Steak to anyone looking for an exceptional grilling experience. Five stars!

    So good

The meat was great. Weight was right on. Shipping was top quality. Packaging was professional. Meat arrived ice cold and mostly still frozen. Could have been refrozen but I wanted to eat it. Trimmed perfectly. I portioned it to get 3 pieces of similar thickness. Thinnest cooked for 3 minutes; thickest about 7 minutes.

I’ve found that I’m eating smaller portions of meat less frequently and I’m happy to pay a premium for better quality. This fed 3 people with some leftover pickings. At this point, I’ll take skirt and tri tip and other “lesser” cuts over strips and ribeyes. Im getting ready to do my insane Australian tri tip next. Can’t wait.
