When don't you need a 1/2 cow?!!!
First thing's first. This thing's a monster cut of beef! It's just a treat to look at. My only concern upon receiving it was how do I store it. So I essentially trimmed it down to 2 bones per chunk and vac sealed them. When it came time to preparation and cooking, Tomahawks are one of my most favorite things to work with and Prime Rib is a very close 2nd. So, this was an amazing experience to have the 2 favorites built into 1. This thing basically melts in your mouth as it's super tender and easy to chew. The marbling was amazing and the flavors was beefy in a good way with a ton of fatty flavors. I kept seasoning simple with just fleur de sel and fresh cracked peppercorn. For a cut like this, you wouldn't want to season it with anything more than just that.
Now I just have to figure out how to prep and cook this thing as a single piece.
