The Strip Loin is the source of the New York strip, one of the most highly prized steaks. Our G1 MidWestern Strip Loins present excellent Marbling. We do not trim this cut and leave it up to you to decide exactly how you want it as this is a roast that is very easy to custom cut.
The Striploin contains fat in levels that are somewhat in between the tenderloin (virtually none) and the ribeye (plenty of good, melty fat), and has flavors and textures that are more uniform throughout, unlike the ribeye which has varying textures.
The best thing about buying the Striploin is that you can create cuts of several thickness, for example: An awesome 2'' inch New York Strip and some very fine strips for a cool sandwhich.
The average Striploin weights 14 lbs. If we do not have it in stock, we can probably procure it in 1-2 days.
