DESCRIPTION

The USDA Prime of Lamb

These Lamb Double Chops represent the pinnacle of American-raised lamb, sourced exclusively from Van Well Farms in Watertown, South Dakota. Often referred to as the "USDA Prime of Lamb," these double-cut chops are renowned for their generous marbling, delicate and creamy texture, and exceptionally mild, non-gamey flavor.

Raised on high-quality pasture and finished on grain in a stress-free environment, these "happy lambs" deliver a juicy, mellow eating experience that is approachable for both seasoned lamb lovers and those new to the category. Each pack contains three substantial 5–7 oz chops, perfect for grilling, sous vide, or searing to a perfect medium-rare.

Domestic vs. Imported Lamb

Domestic lamb is a premium product that is harder to procure than its imported counterparts. Here is why it stands out:

  • Size: Domestic lamb is approximately 1.5x larger than imported varieties.
  • Flavor: It features a milder, non-gamey flavor profile. Unlike lamb from Australia or New Zealand, it does not have the strong "gamey" notes that can be polarizing.
  • Texture: The pasture-raised and grain-finished diet results in rich marbling and a creamy, buttery texture.

Cooking Recommendations

Treat these chops like a T-Bone or Tomahawk steak. Aim for a good char on the outside with a pink center to yield a rich and juicy flavor. They are versatile and perform beautifully when:

  • Grilled: High heat for a perfect sear.
  • Sous Vide: For precise temperature control and tenderness.
  • Pan-Seared: In a cast-iron skillet with butter and herbs.

    Delicious

These were the best lamb lollis I've ever had. Meaty and juicy. Marinated with olive oil, shallots, garlic and parsley. Dropped in a sous vide bath for 10 hours. Seared them in cast iron then drizzled with butter and balsamic glaze.
