While the most difficult part of making Porchetta is the tying, we’ve done that for you. To get the perfect balance of tender meat and crispy skin, follow these steps:

- Season: Rub your chosen herbs (garlic, rosemary, fennel, or others) directly onto the meat. You can do this without removing the strings by working them into the crevices.

We raised heritage pigs for years and I have been mourning the loss of access to well raised meat. I wanted a porchetta for Easter and none of the local butchers could provide what I wanted with the skin on. I decided to give meat n' bone a chance. The meat arrived still frozen and vacuum sealed within 48 hours of ordering. I defrosted and re-dressed it for our Easter supper and couldn't have been more pleased about its taste and texture. I would definitely order this again. Mind you, it is not inexpensive, but it is quality and that is important. You don't eat porchetta like you eat a steak, slices are thin and rich, you don't need a lot to feed a crowd. Beware of shrinkage, I would say mine was about 66% of where we started by the time it was fully cooked.

Firstly getting the last minute notice you will be hosting Christmas unexpectedly due to family business is stressful. I ordered with about 6 days before Christmas and emailed asking for quick processing and paid for overnight shipping. Immediately got a response and sure enough received it with plenty of time to defrost, open up to season and dry brine. Perfect for a main for a family gathering. You can handle most of the cooking before a crowd shows up. I trimmed some of the pigskin to make sure there was only skin on the outside. A little work but extra chicharron.
