Competition-Grade Heritage Ribs
Meat N’ Bone’s Heritage St. Louis Style Ribs are crafted for pitmasters and home cooks who demand both flavor and responsible sourcing. Cut from the belly of heritage breed hogs, these meaty, well-trimmed slabs offer a rich, juicy texture that stands out on the grill or smoker. Larger and more substantial than baby back ribs, they deliver the consistent quality and ideal meat-to-fat ratio trusted by competition BBQ enthusiasts.
Sourcing & Quality Standards
Our Heritage pork is sourced from small, family-run Midwest farms where animal welfare and sustainability are priorities. These hogs are raised with care, ensuring a superior eating experience:
- Heritage Breeds: Raised using traditional, sustainable farming methods.
- Humane Raising: Raised outside on pasture or in deeply bedded pens.
- 100% Vegetarian Diet: Fed only natural, vegetarian feed.
- No Antibiotics or Hormones: Never given antibiotics or added hormones – EVER.
- Certified Humane & Raised with Care®: Meeting rigorous standards for animal welfare.
This program focuses on raising DUROC pork of the highest quality from specific family farms, certifying the pedigree of each animal to ensure consistent, premium results.
Flavor & Texture Profile
St. Louis Style Ribs are cut from the belly of the hog after the belly is removed, resulting in a flatter, meatier rack compared to the curved baby back. This cut offers a robust pork flavor and a tender, juicy bite when cooked properly. While often grilled, they also perform exceptionally well when smoked low and slow, allowing the fat to render and the meat to become fall-off-the-bone tender.
Preparation & Delivery

This item MIGHT be delivered frozen for your convenience. Want it never frozen? Let us know.
Each rack weighs approximately 2.5–3 lbs, providing a substantial portion for your next BBQ or family dinner. Whether you’re aiming for a top placement in a KCBS master series or simply want the best ribs you’ve ever tasted at home, these Heritage St. Louis Style Ribs deliver.
Frequently Asked Questions
What makes these Heritage St. Louis Ribs different from grocery store ribs?
These ribs are sourced from heritage breed hogs raised on small, family farms with a focus on animal welfare and quality. The result is a meatier, better-marbled rib with superior flavor and tenderness compared to commodity pork. Many customers note they outperform grocery store options and have even helped them win BBQ competitions.
How are the pigs raised?
The hogs are humanely raised outdoors or in deeply bedded pens, fed a 100% vegetarian diet, and never given antibiotics or hormones. The program is Certified Humane and Raised with Care®.
Are these ribs suitable for BBQ competitions?
Yes. Many competition pitmasters and barbecue enthusiasts use these ribs for their consistent size, even slabs, and ideal meat-to-fat ratio. Reviews include several top placements in BBQ competitions.
Will my ribs arrive fresh or frozen?
This item may be delivered frozen for convenience, but you can request never-frozen delivery if preferred.
How do St. Louis Ribs compare to Baby Back Ribs?
St. Louis ribs are cut from the belly and are larger, meatier, and flatter than baby back ribs, which come from the loin. St. Louis ribs have a richer flavor and more fat, making them ideal for smoking and grilling, while baby backs are leaner and cook slightly faster.
What is the best way to cook these ribs?
These ribs are versatile and can be grilled, smoked, or oven-roasted. For best results, use a low-and-slow method to break down the connective tissue and render the fat, resulting in tender, juicy meat. Many customers recommend the 3-2-1 smoking method for exceptional results.
Are there any allergens I should be aware of?
This product is pure pork with no added ingredients, marinades, or allergens. It is processed in a facility that handles other meats, so please check packaging for specific cross-contamination information if you have severe allergies.
How should I store these ribs?
If delivered frozen, keep them frozen until ready to use. If delivered fresh or thawed, store in the refrigerator and use within 2-3 days. For longer storage, freeze immediately and use within 6 months for best quality.

The rack is a little smaller than what you get in a grocery store. I read reviews and knew this going on. The meat and flavor are next level. Difficult to describe the difference there is a subtle ham flavor along with the smoked rib flavor and super tender and juicy. I’ve had ribs in many restaurants and bbq joints throughout the south, but hands down the best ribs I’ve ever had.

These St Louis Ribs we’re great to cook up. They were Small and Juicy , they cooked up fast and the fat melted away just as fast. In the end these Ribs tasted amazingly great, juicy and so tender, my son loved them.
I’ll be ordering some more soon.

These ribs are outstanding. Ran them alongside the Iberico ribs on the RecTeq, and these are so meaty with the perfect amount of fat to keep them juicy -- they were excellent. These are the front rack in the picture.
