Wagyu New York Striploin Steak
Miyazakigyu Wagyu is the #1 Wagyu brand in Japan and supply stateside is quite limited. This steak is usually sold for $35-$50 per oz at top steakhouses.
We now cut our Striploins into whole steaks as that was preferred by our customers. The Striploin steak is the equivalent of the New York Strip in A5 beef. That said, the Japanese cut their primals slightly differently.
We recommend the Striploin to share as it is one of the most consistent steaks. Share it between a few people and everyone will have a similar experience.
About A5 Wagyu
A5 Miyazaky beef is measured on five factors: (1) marbling, (2) meat color and brightness, (3) firmness and texture of meat, and (4) color, luster and quality of fat.
In the quality grade, the lowest score from the four items of the yield grade is adopted. In other words, even if grade 5 was given to marbling, color and brightness, and firmness and texture, and only fat assessments was grade 4, the quality grade of this beef is classified as grade 4. Quality grading is severely done.
A5 means this beef excels in every single factor. It has a gorgeous webbing of fat that will make you feel a creamy mouth-feel in each bite. It's literally like tasting a cloud; a cloud of beef.
Like all of our steaks, they come vacuum sealed and have been hand-cut by our expert butchers.
The Miyazaki-Gyu Difference

At Meat N' Bone we made the conscious decision of selling not only Miyazaki A5 but Miyazaki Gyu because it is the best in the world. Other Wagyu from the area that do not meet the criteria for Miyazakigyu must be sold as "Miyazaki Kensan Gyu" or "Beef from Miyazaki Prefecture."
All Miyazakigyu is Wagyu but not all Wagyu is Miyazakigyu. Miyazakigyu is one step above Miyazaki Wagyu and is the cream of the crop of all Wagyu from Miyazaki. It is quite literally the best beef in the world.
Every five years, national “Wagyu Olympics” are held to determine Japan’s, and therefore the world’s, best Wagyu. Miyazaki-Gyu is the only Wagyu Program to win this award twice in a row (2007 and 2012) and then be a runner up in 2017.
You can and will find cheaper A5 beef. In fact, even Kobe beef is cheaper. But we chose to offer the best beef in the world at the most affordable price that we could.
Never Had Wagyu A5 Beef Before?
At first glance, every cut of A5 beef will be EXTREMELY fatty compared to any other steak you have ever had. That delicate and yet rich fat, which can make up to more than 60% of the steak is what makes it melt in your mouth.
This amount of fat makes the beef have a lower melting point, meaning it will cook faster than your average steak. Cooking A5 is extremely easy, that said, it is recommended to pay close attention so that you do not burn or overcook your steaks.

The striploin strip is cut from the short loin which is a muscle that does little work, like the filet.

Since 2018 I’d watched countless videos about A5 Waygu - (reviews, documentaries, how to cook) - and finally pulled the trigger. 1 Strip / 1 Filet (Miyazaki) as a Christmas Gift for my GMA. What to get the person who has everything? A new experience. I was hesitant for these reasons:
1) Worried it would not look as good as the pictures (and like all the videos.) - Upon opening package, concern vanished/immediately took this picture.
2) Would I really notice/taste a big difference? Like so many things, thought this must be overhyped. Also will I be able to get the same results as all these YouTube chefs? - all I will say is that I kept waiting for the ball to drop, but it never did. Not only did this meet hopes/expectations to wow my grandparents & myself, it exceeded them at every step. Thought that M&B’s reasonable prices meant the product might be 70-80% as good as sites that cost 2-3x more. I can confidently say that you do not need to go elsewhere and pay $250+ for the same cut / perfecture. Excellent selection. About to make another purch to share experience with parents/friends. GMA, GPA, & bro who doesn’t like red meat all said it was best beef they’ve ever had, hands down & I agree.

Unbelievably soft and juicy. Each bite seemed tastier than the last. Recommend a subscription plan so that in-home date nights are booked and you never go more than a few weeks without your A5.

I shared this with a friend of mine and was so excited I forgot to take pictures of the final product. Had this steak with a 52 day dry aged ribeye roast. The Meat & Bone Wagyu was melt in your mouth. What an experience.

Ordered this and two filets as part of a pre-Christmas family gathering. Cooked in my salamander broiler to absolute perfection. Only minor complaint is the strip is thinner as compared to a traditional cut so you do have to be careful using high heat to not overcook.
As others have said, once you try this nothing else compares! Will definitely be ordering again in the near future. Steaks were well packaged and shipped in an attractive box.

My family and I just shared this marvelous piece of meat. I thought when I had Australian Waygu BMS 9+ that I made it to the big leagues. This piece of meat is amazing. My wife and sister were left speechless. He'll we even gave our Boston Terrier a piece. You can't go wrong with A5. It's a must try atleast once.
