Also known as "The Newport" or "Santa Maria" steak is a very popular cut in California and South America. It is a lean cut, with a beefy taste... slightly nutty.
This steak is built for griling. HOWEVER it is also amazing to smoke or put in the oven.
The tri-tip is the triangular section of the sirloin primal and comes from the point where the sirloin meets the round and flank primal.... which is exactly where the name comes from: Tri-Tip = Triangular = Three tips.
The tri-tip is full of flavor because of excellent marbling and very tender as long as you don't overcook it. We suggest not cooking more than medium.

Our Tri-Tip is G1 Certified, meaning it is of the highest quality in the market. This means you will always get beef with Abundant or higher marbling, grade "A' maturity and it is sourced specifically from a couple specific farms in the MidWest (Nebraska). Our Tri-Tip has been wet aged for 30 days and it makes a HUGE difference... often it is more marbled than a RibEye!

This order was for 3 prime Tri Tips and a wagyu eye of round (which I have purchased the eye round before). I have ordered from here maybe 5-6 times or so over the last year. The meat quality has always been……let’s cut to the chase here. My experience with this company has been amazing. The only reason I’m giving a 4 star review is because my 3 Tri Tip cuts came within 45 minutes of resting on a counter top from being thawed completely (the eye round was frozen, which was weird). This has NEVER been an issue for me with this company. Unless this becomes routine, I’m gonna consider this a one off, I’ll keep ordering here. I have already cooked the eye round and it is complete beef candy as a French Dip. I have one of the 3 Tri Tips dry brining for 24 hours. Will be grilling it here in a couple hours. The meat smelled good, looks good, but like I said, don’t like my meat coming thawed. My eye round I sous vide for 18 hours and seared over charcoal for a few minutes and then I froze it for a couple hours before shaving it into lunch meat are the pics I’ll post here for now. My Tri tip photos/videos will be next.

Cooked in the oven and finished on the grill. Has some good flavor and was soft. Never had tri tip before and I'll most likely be ordering again in the future.

I ordered two tri-tips. One was this USDA Prime being reviewed, and the other was the Wagyu. The Wagyu cost twice as much. Was it worth it?
Well, I put it to the test. I dry brined them both overnight, rubbed them the same, cooked them the same, rested them the same.... and they both came out cooked perfectly.
Then the moment of truth:
I will say that the Wagyu was indeed better, but it wasn't twice as good by a long shot. The Prime was outstanding, but you got slightly more fatty mouth feel from the Wagyu. Both were tender, both were beefy, both were delicious.
Maybe splurge for the Wagyu for a special occasion or if you have money to burn, but the Prime was right there with it.

Beautifully trimmed and redolent of that wonderful fresh beef smell. A quick rub of salt and pepper, grilled directly for a few minutes on either side, the indirectly until internal temperature arrived at 129 degrees F. Rested for 10-15 minutes, sliced, and then tasted a piece. Life suddenly was a lot better. The review title says it all - in three languages. I'll be back for more.
