Wagyu Boneless Short Rib
Short Rib is one of the most flavorful steaks in the steer. It's extremely marbled and tender. Cooked properly, these ribs could run for the most flavorful cut of beef in a steer.
While ideal for braising, they can be cooked many different ways. You can cooked them with indirect heat, smoke them or cut them into small steaks and grill quickly over high heat (however, they will be chewy. It's a short rib after all. Go for Denver steaks if this is what you desire).
If you know your Miami steakhouses, one of them is famous for selling these.
Why Is Our Wagyu Best In Class?
We work with what we consider to be the best Wagyu program in the US. This program processes a small amount of steers every week (140-175) which allows them to put care into every steer. These boneless short ribs come from a mid-sized family owned company that puts a lot of care into each cut.
We have compared this program to others from major chains and stores, and we find that it consistently tastes better and eats better. This may be because these animals are fed for longer and at a slower phase than what you will find with other wagyu brands. The genetics of their animals are superior as well they’re very selective with the bulls they use from Japan (Japanese Kuroge Tajima bull).

I have been buying several items from Meat & Bone for a while now. The boneless short rib for the price is excellent. Perfect for reverse searing. Excellent taste and very juicy. I use it many times as a snack while cooking larger pieces of meat.
Just bought a couple more and also some Denver steaks. The Wagyu piranha was also great.

I’ve been buying these for about a year now to slice up thinly for Korean bbq. The boneless short ribs are a staple at any kbbq and it’s hard to find something comparable you can use to make them at home. These are awesome. Great for slicing thin. Amazing flavor. Always the hit of the night.

Wagyu Beef short ribs while very tasty, had a ton of fat to remove before cooking so that cut down quite a bit on what was left to enjoy.
The Denver steak was very good, I was surprised. I used a Olive Oil binder, then some Maldon Salt, Cayenne pepper and Killer Hogs Steak rub. Reversed seared on my Kamado Joe.
I would definitely order from you guys again and try a few different cuts of meat.
