Economical, tender, delicious... The Flat Iron steak may be the best cut of beef to grill, heck it may be the best cut overall.
This relatively unknown cut of beef (although gaining popularity) is the result of research by teams from the University of Florida and the University of Nebraska as part of the Beef Checkoff program. The goal was to look for additional opportunities to add value to beef through development of new beef cuts... clearly, they succeeded.
Flat Iron steaks are beautiful to look at, they have an appealing texture and a decent amount of marbling.
The flat iron might not get nearly as much attention as rib-eyes and strips, but it’s a quality cut of meat, lean and usually inexpensive enough for a nice weeknight dinner
WHY IS OUR WAGYU THE BEST IN CLASS?
We work with what we consider to be the best Wagyu program in the US. This program processes a small amount of steers every week (140-175) which allows them to put care into every steer. These steaks come from a mid sized family owned company that puts a lot of care into each cut.
We have compared this program to others from major chains and stores, and we find that it consistently tastes better and eats better. This may be because these animals are fed for longer and at a slower phase than what you will find with other wagyu brands. The genetics of their animals are superior as well they’re very selective with the bulls they use from Japan (Japanese Kuroge Tajima bull).

Delicious!
Great quality steak. It was simply delicious! The meat was tender and juicy. I enjoy filet mignon and this cut was perfect for me. Great price. It was delivered on time and nicely packed with ice pack.

Flat Iron Wagyu BMS 7+
This steak was even more enjoyable than I thought it would be. On the grill, the beefy aroma hits you pretty hard. It's marvelous. On the plate, the cut was very tender and juicy, with lots of beefy flavor. You will occasionally run into a little silverskin (I did some extremely minor trimming on mine), but don't let that detract from the good eating experience this steak provides. Of course, the Wagyu BMS 7+ rating helps with all of that tenderness and juiciness. I cut this steak across the grain when eating it, making thin slices. Divine. This was only my third time having this cut, both previously were at restaurants. This was also my first Wagyu Flat Iron. Maybe that's why I wasn't quite sure what to expect, given my two previous experiences, which were not bad, just unremarkable. But I can definitely recommend this product. The flavor profile was quite gratifying.
