Meat N' Bone is a Florida-born premium butcher shop with eight boutiques across Miami-Dade, Broward, Palm Beach, Tampa and Orlando. It started in a closet.
We Started Meat N' Bone Because We Couldn't Find a Decent Steak in Miami
That's the whole origin story, more or less.
In 2016, two friends in Miami kept running into the same problem. We loved to cook. We loved to eat. And every time we went looking for the kind of beef we'd had at a great steakhouse, we came up empty.
The supermarket case told us almost nothing. "Grass fed" and "pasture raised" could mean a dozen different things. Finding a great USDA Prime ribeye was harder than it should have been. Japanese A5 Wagyu was something you ordered at a restaurant, already cooked and marked up several times over. IbΓ©rico de bellota was even harder to find.
None of us came from the meat business. Luis came from finance, Gabriel was a computer scientist, and our third partner brought operational experience to support it. What we had was a very specific frustration and enough stubbornness to do something about it.
So we started calling farms.
We drove into the Midwest and met the people raising the cattle. We learned about grading, aging, genetics, feeding programs, processing and all the little decisions that can make two steaks carrying similar labels eat like completely different products.
In March 2018, with about $15,000 and roughly forty products, we launched Meat N' Bone out of a closet.
Not a metaphor. An actual closet, borrowed, with a freezer wedged into it.
We coded the website ourselves, built the shelving ourselves, and took the product photos ourselves, badly, before eventually taking them again. We packed every order by hand and drove many of them personally around Miami.
The closet is gone. The basic idea isn't.
Eight Local Florida Butcher Shops
We started online, but we learned pretty quickly that buying great meat is still a very physical experience.
Sometimes you want to look at the ribeye. You want to compare two steaks. You want to ask the butcher what he would cook tonight. You want to walk in looking for dinner and walk out with something you hadn't thought about.
So we opened stores.
Meat N' Bone Miami: Coral Way Butcher Shop

This is our original butcher shop and the neighborhood where Meat N' Bone grew up. Our Coral Way location serves Miami, Brickell, Shenandoah, The Roads, Coconut Grove, Downtown Miami and the surrounding neighborhoods.
It's also home to MNB Kitchen, where our chef cooks simple, approachable dishes using the same proteins we sell in the store. This remains one of the locations where you're most likely to run into someone from the founding team.
Coral Way is home.

Our Coral Gables butcher shop serves Coral Gables, South Miami, Coconut Grove and the surrounding area, with Wagyu, USDA Prime beef, seafood, game and the rest of the Meat N' Bone assortment available for pickup or local delivery.
It also shares its home with The Wagyu Bar, our steakhouse built around much of the same philosophy as Meat N' Bone: start with an exceptional ingredient and don't get in its way.
It's our newest boutique and probably the location that feels most like us. You'll find Gabe or Luis having lunch there more often than either of us would probably admit.
Meat N' Bone Pinecrest Butcher Shop

Our South Miami-Dade butcher shop serves Pinecrest, Palmetto Bay, Kendall, Cutler Bay, South Miami and nearby neighborhoods.
There are plenty of places to buy meat in South Dade. We know that.
Pinecrest has become our little store that could: a small neighborhood butcher shop with an unusually deep assortment of Wagyu, USDA Prime steaks, grilling cuts, seafood, game and specialty proteins.
If you're looking for something better than the supermarket case without driving north, that's exactly what this store is here for.

Our second Meat N' Bone store opened in Coral Springs in 2019 and serves Coral Springs, Parkland, Coconut Creek and surrounding northwest Broward communities.
We took over a butcher shop that had already served the neighborhood for roughly 25 years, and we have always thought there was something special about that. We weren't introducing Coral Springs to the idea of a neighborhood butcher. We were inheriting one and trying to do right by what had been there before us.
This shop has been part of the company almost from the beginning, back when opening a second location still felt slightly crazy.

Our Hallandale Beach location serves Hallandale Beach, Hollywood, Aventura, Sunny Isles Beach, Golden Beach and the surrounding east Broward area.
It's one of our best-looking spaces, in a beautiful shopping plaza on Federal Highway with something every South Floridian appreciates: plenty of parking.
The Wagyu House is here too. You can buy the steak from the butcher shop and cook it yourself, or walk a few steps and let us cook one for you.

Our Palm Beach County butcher shop is located in Wellington Marketplace and serves Wellington, Royal Palm Beach, Loxahatchee, West Palm Beach and nearby communities.
Wellington put us in the middle of one of the country's most important equestrian communities.
We love horse country. We love animals. We love the people we've met here, and we genuinely love being part of this community.
It has turned Wellington into a particularly fun market for us to get to know.

What's Actually in the Case
We are not a steak shop with a few extras bolted on.
The point of Meat N' Bone was always to become the only protein stop you need. That means carrying the things supermarkets often don't carry because they're too specialized, too expensive to inventory broadly, or simply don't move fast enough.
Beef is the heart of it.
We carry Japanese A5 Wagyu, alongside American Wagyu and Wagyu-Angus, USDA Prime and G1 Certified beef, 45+ day dry-aged beef and 100% grass-fed beef.
Then there are the cuts.
Ribeye, New York strip, tomahawk, porterhouse, picanha, filet mignon, short ribs, skirt steak, flank, bavette, teres major, chuck flap and whole primals if you want to break one down yourself or fill a freezer.

And beef is only part of the case.
Pork includes IbΓ©rico de bellota from Spain: secreto, presa, pluma, chops, ribs and pork belly, alongside heritage-breed domestic pork and whole pigs for the people who take their caja china seriously.
We carry all-natural, air-chilled poultry, including chicken and duck, plus lamb and game meats including bison, elk, venison and wild boar.
Then there's seafood: sashimi-grade tuna and salmon, lobster, prawns, shellfish and caviar.
And everything that belongs next to it: jamΓ³n ibΓ©rico, charcuterie, cheese, gourmet sausages, compound butters, rubs, sauces, sides and prepared foods.

Let's Talk About Price, Honestly
The assumption is that a butcher like Meat N' Bone must be expensive.
Sometimes we are. Japanese A5 Wagyu is expensive. A 45-day dry-aged Prime ribeye isn't supposed to cost what commodity supermarket beef costs.
But that's not the whole story, and it's worth explaining why.
First, we don't hide shipping inside the price of the meat.
A lot of national premium meat companies advertise "free shipping," but somebody is paying for that box, insulation, dry ice and overnight freight. In many cases, part of that cost simply gets built into every product.
We'd rather price the meat and price the freight separately.
That matters locally. If you walk into our Pinecrest butcher shop and buy two steaks, you shouldn't be subsidizing somebody else's overnight shipment to California.
Second, we buy whole primals and cut much of our beef ourselves.
Breaking down a whole ribeye or strip loin in-house removes another layer of processing margin and gives us more control over the product.
It's also why buying a whole primal can be dramatically less expensive per pound than buying the same product portioned into individual steaks.
And third, the honest comparison has to be grade to grade.
A supermarket Choice ribeye and a Meat N' Bone USDA Prime ribeye aren't the same product, so comparing the two shelf prices doesn't tell you very much.
Compare Prime against Prime. Dry-aged against dry-aged. Japanese A5 against Japanese A5. American Wagyu against American Wagyu.
Once you compare the same product, the pricing gap often becomes much smaller than people expect.
Most importantly, most of our guests aren't buying Japanese A5 Wagyu on a Tuesday.
They're buying picanha, outside skirt, bavette, teres major, chicken, burgers, seafood and Wagyu-Angus ground beef. These are products meant to become part of how somebody actually cooks, not simply a luxury purchase once a year.
That's the part of Meat N' Bone we're proudest of.
Getting somebody to come in once and buy an incredible steak is relatively easy. Getting them to come back because this is where they buy their ground beef on Wednesday is much harder.
We don't want to be the place you shop once a year. We want to be your butcher.
Same-Day Meat Delivery in Miami, Broward, Palm Beach, Tampa & Orlando
Of course, having a great butcher nearby doesn't help much if you can't get the food when you need it.
Meat N' Bone offers local delivery throughout Miami-Dade County, Broward County, Palm Beach County, Tampa and Orlando, along with free in-store pickup at our Florida butcher shops.
Order for same-day meat delivery when you're cooking tonight. Use our two-hour rush option where available when somebody forgot they were hosting. Or schedule the order in advance and choose the date and delivery window that actually works for you.
Scheduled delivery is the one we'd particularly point you to for dinner parties and holidays.
If dinner is on the 14th, there is no reason your steaks need to arrive on the 8th and spend a week sitting in the refrigerator.
Same-day and scheduled local delivery are free on orders over $150. In-store pickup is always free, regardless of order size.
A small number of specialty and lower-rotation products ship from our central fulfillment center instead of a local boutique. We keep them centralized because we'd rather have a specialty item stored properly in one place than sitting in eight display cases waiting for the right customer.

From a Miami Startup to a National Meat Brand
We didn't set out to get written about.
But when you spend eight years telling people exactly what's in the case, word travels.
Forbes covered our story early and has since included Meat N' Bone in its coverage of luxury meat delivery and gifting. The Washington Post cited us in its 2020 reporting on what happens to consumers when the industrial meat supply chain buckles, a moment we happened to be built for.
Food & Wine and USA Today have both included Meat N' Bone in their coverage of online meat retailers. We've also appeared in the New York Post, Robb Report, InsideHook, Yahoo! Life and The Infatuation.
The local coverage is the part we're actually sentimental about.
Miami New Times first wrote about us in September 2019, only a few months after Coral Way opened. Back then we were three friends who had never worked in the meat industry trying to explain why we had built what they called a beef-tech startup.
They came back years later after that little shop had quietly turned into something much bigger.
Tampa Bay Times covered our Tampa storefront. Wellington The Magazine featured the Wellington boutique and its place in the local equestrian community.
And in 2024 we somehow ended up on the side of the #15 NASCAR car with Rick Ware Racing, which none of us saw coming when we were packing steaks out of a closet.

Come See Your Local Butcher
There's a version of this business that would have been easier.
Buy commodity beef, put a nice logo on it and spend the difference on advertising. It's a well-worn path and plenty of brands are on it.
We went the other way.
We source from specific programs. We cut in-house. We try to tell you exactly what you're buying, even when the honest label isn't the simplest one to market. We carry things that don't necessarily make sense for a supermarket because they move too slowly.
