#GrillMasterRecipes: Making a Pork Crown!


A Pork Crown is the formation of a pork rib rack, typically 8 ribs, formed into a circle, with the ribs up. 

A pork crown is a culinary achievement and it looks cool enough to be the centerpiece of your table. Packaging a pork crown is a challenge (which is why we do not sell the crowns already made) and its best if you season the pork before you build the crown. But by looking at this video you will see how easy it is to make it yourself.

Here are the steps to do it:

 

Step #01: Preheat oven to 350F

 

Step #02: Make incisions every two bones, cut about 1" deep so you can bend the pork rack

If you over-cut it will be fine, do not be shy.

Step #03: Season with your favorite rub

We used our Notorious P.I.G. Rub which is awesome. 

Step #04: Tie with a string to make a crown, as shown

This part can be challenging if you do not have a lot of experience. It helps to enlist a helper who can tie the string while you hold the crown.

Take your time, be patient.. it is worth it!

Step #05: OPTIONAL: Make incisions in between the bones on top

 

This will improve the look of your crown once cooked, has no impact on flavor.

Step #06: Place in a rack, bones up

Step #07: Cook 18 minutes per lbs (until 145-160 internal temperature)

You CAN eat pork cooked medium, specially when we are using high quality pork such as the one Meat N' Bone sells.

Step #08: Rest for 20 min

Step #09: Carve and serve!
