The Lean, Consistent Cut for Precision Smoking
When most people talk about Brisket or buy it at the grocery store, they are thinking of a Brisket Flat. But in reality, this is just half of a whole Brisket, which includes both the flat and the point and weighs on average about 16 lbs.
This is the Brisket Flat—the deep pectoral muscle from a boneless brisket. You could call it the lean part of the cut. The Brisket Flat is an ideal cut for cooking low and slow—on the barbecue, in a smoker, or in a slow-cooker. We also sell whole brisket for those who want to do the trimming themselves.
Texture & Flavor Profile
Because the flat is the leaner portion of the brisket, it offers a tighter grain and a more uniform texture than the point. When cooked correctly, it yields clean, even slices that hold their shape beautifully on the plate.
- Texture: Firm yet tender when slow-cooked, with a consistent bite throughout the cut.
- Flavor: Deep, beefy, and rich, supported by the balanced marbling of our USDA Choice G1 Certified program.
- Appearance: Creates a stunning smoke ring and a professional-looking bark when smoked.
Why G1 Certified?
Our G1 Certified beef represents a commitment to quality that goes beyond standard USDA grading. These cattle are raised with specific feeding programs designed to enhance marbling and flavor development. The result is a brisket flat that is not only lean but also deeply flavorful and consistently tender.
Sourcing & Origin
Meat N’ Bone sources its G1 Certified beef from trusted partners who prioritize animal welfare and consistent quality. Each brisket flat is expertly trimmed by our butchers to remove excess hard fat and silver skin, ensuring you get a high yield of usable meat. This level of preparation saves you hours of work and guarantees a professional result at home.
Cooking Recommendations
The brisket flat is best suited for low-and-slow cooking methods that allow the connective tissue to break down without drying out the lean meat.
- Smoking: Maintain a steady temperature between 225°F and 250°F. Use a water pan to keep the environment humid.
- Braising: Excellent for pot roasts or making homemade corned beef.
- Sous Vide: Cook at 155°F for 24–36 hours for unparalleled tenderness.
Freshness & Handling
Your brisket flat arrives vacuum-sealed and frozen or chilled, depending on your shipping preference. The vacuum seal locks in freshness and allows the meat to age slightly during transit, enhancing tenderness. Upon arrival, keep the product frozen until you are ready to thaw it slowly in the refrigerator for 2–3 days before cooking.
Frequently Asked Questions
What is the difference between a brisket flat and a whole packer brisket?
A whole packer brisket includes both the lean flat and the fatty point. The flat is the leaner, more uniform section that slices neatly. The point is thicker, fattier, and often used for burnt ends. Buying just the flat saves you the work of trimming and separating the two muscles.
What does G1 Certified mean?
G1 Certified is a premium beef program that ensures specific standards for marbling, feeding, and quality. It guarantees a level of consistency and flavor that exceeds standard commodity beef.
How should I store my brisket flat?
Keep the brisket frozen until you are ready to use it. When ready to cook, thaw it in the refrigerator for 2–3 days. Do not thaw at room temperature.
Is this brisket trimmed?
Yes, our brisket flats are expertly trimmed by our butchers to remove excess hard fat and silver skin, providing a high yield of usable meat.
What is the best way to cook a brisket flat?
Low-and-slow is key. Smoking at 225–250°F until it reaches an internal temperature of 200–205°F is the standard method. Braising or sous vide are also excellent options for ensuring tenderness in this leaner cut.
Can I make corned beef with this cut?
Absolutely. The brisket flat is the traditional cut used for corned beef due to its uniform shape and lean texture.
What sizes are available?
We offer brisket flats in various weight ranges, typically from 6–8 lbs up to 12–14 lbs, allowing you to choose the right size for your smoker or gathering.
How does this compare to grocery store brisket?
Our G1 Certified brisket offers superior marbling and flavor depth compared to standard grocery store options. Additionally, our professional trimming saves you time and ensures a higher yield of premium meat.

- Rated 5 out of 5 stars1 year agoGorgeous piece of brisket
Well marbled and turned out tender and delicious.
Cut the flat in half so that I could make a smoked brisket from 1/2 and the other into corned beef for St Patty's day next week. We had the smoked brisket for dinner, and again for lunch the next day, and now again for breakfast as a hash.
The other half is under vacuum and brining until the weekend when it will come out and cook in the sous vide for 48 hours. So far it's been really great !
