When most people talk about Brisket or buy it at the grocery store, they are thinking of a Brisket Flat. But in reality this is just half of it as a whole Brisket which would include the flat and the point and weight on average about 16 lbs.
This is the Brisket Flat, the deep pectoral muscle from a boneless brisket; you could say, the lean part of the it. The Brisket Flat is an ideal cut for cooking low and slow-on the barbecue or in a slow-cooker. We also sell whole brisket for those who want to do the trimming.

Well marbled and turned out tender and delicious.
Cut the flat in half so that I could make a smoked brisket from 1/2 and the other into corned beef for St Patty's day next week. We had the smoked brisket for dinner, and again for lunch the next day, and now again for breakfast as a hash.
The other half is under vacuum and brining until the weekend when it will come out and cook in the sous vide for 48 hours. So far it's been really great !

Did this 11lb. brisket in the over with a dry rub wrapped in saran wrap for 12 hours and it was mind blowing good. Meat quality was stellar, highly recommend!
