    Gorgeous piece of brisket

    Well marbled and turned out tender and delicious.

    Cut the flat in half so that I could make a smoked brisket from 1/2 and the other into corned beef for St Patty's day next week. We had the smoked brisket for dinner, and again for lunch the next day, and now again for breakfast as a hash.

    The other half is under vacuum and brining until the weekend when it will come out and cook in the sous vide for 48 hours. So far it's been really great !

    Brisket that Blows your Mind!!!!

    Did this 11lb. brisket in the over with a dry rub wrapped in saran wrap for 12 hours and it was mind blowing good. Meat quality was stellar, highly recommend!
