This sausage contains pork, an intentional part of our artisanal sausage-making process. Crafting a great sausage is about balance—lean meat, fat, seasoning, and technique—and the inclusion of pork provides the natural fat needed for proper juiciness, texture, and flavor.

The primary protein remains the focus, with the pork playing a supporting role that enhances structure, mouthfeel, and overall eating quality—hallmarks of a gourmet, craft-made sausage.
