    The Eye Round has the reputation of being tough, and it is... however if you cook it well its anything but tough. This is the kind of beef grandmas make AMAZING dishes out of.

    You can cut steaks out of the eye round, which can be grilled and smoked. But you are better off cooking the roast for an extended period of time at low heat. Think crockpot or smoker. Cook low, cook slow!

    The Ground -n- Pound of Eye Round

    I sous vide mine and then seared with a torch. After eating this I’ll never buy a beef tenderloin again. This meat is tender, it’s wet, it’s the best you’re gonna get. The beef flavor is so good. I used half of this in my meat slicer to make French Dip sandwiches.
