The Butcher's Best-Kept Secret
Often called the "poor man's ribeye," the Flat Iron Steak is a culinary discovery that delivers exceptional tenderness and rich, beefy flavor without the premium price tag. This relatively unknown cut was brought to light by research teams from the University of Florida and the University of Nebraska as part of the Beef Checkoff program. Their goal was to find new ways to add value to beef through innovative butcheryâand they succeeded.
At Meat Nâ Bone, we source our Flat Iron Steaks as USDA Prime with a Beef Marbling Score (BMS) of 4+. This ensures a beautiful balance of tenderness, marbling, and deep flavor that rivals much more expensive cuts. Itâs the perfect choice for a high-quality weeknight dinner or an impressive weekend grill session.

Texture & Flavor Profile
Flat Iron Steaks are beautiful to look at, with an appealing texture and a decent amount of marbling. While it might not get the same attention as ribeyes or strips, it is a quality cut of meat that is lean enough for everyday eating yet rich enough for special occasions.
- Tenderness: Second only to the tenderloin, making it incredibly easy to chew and enjoy.
- Marbling: USDA Prime grading ensures consistent intramuscular fat for a juicy, flavorful bite.
- Flavor: Deep, beefy, and robustâperfect for simple seasoning with coarse salt and high heat.
How to Cook It
You CANNOT go wrong with a Flat Iron Steak. Its versatility makes it a favorite among chefs and home cooks alike:
- Grill it: Treat it like a skirt steak or "churrasco" for a smoky, charred exterior.
- Sear it: Pan-sear in a cast-iron skillet for a perfect crust and medium-rare center.
- Braise it: Slow-cook for a melt-in-your-mouth texture that highlights its natural tenderness.
- Sous Vide: Many customers recommend sous vide for absolute perfection and consistent doneness.

Note: This item MIGHT be delivered frozen to ensure optimal freshness and safety during transit.
Frequently Asked Questions
What makes the Flat Iron Steak special?
The Flat Iron is a relatively new cut discovered through university research. It is incredibly tender (second only to filet mignon) and offers rich marbling and flavor at a more accessible price point than ribeyes or strips. Our USDA Prime selection ensures the highest quality.
How should I cook the Flat Iron Steak?
It is very versatile. You can grill it like a skirt steak, pan-sear it for a quick dinner, or braise it for a slower cook. For best results, cook to medium-rare and let it rest before slicing against the grain.
Is this steak delivered fresh or frozen?
The steak is vacuum-sealed for freshness. Depending on shipping logistics and your location, it may arrive frozen. This ensures the meat remains safe and retains its quality until you are ready to cook it.
Where does this beef come from?
We source our USDA Prime beef from trusted partners who meet our high standards for marbling and quality. The Flat Iron cut itself was popularized by research from the University of Florida and the University of Nebraska.
What is the best way to season a Flat Iron Steak?
Because of its rich beefy flavor, simple is often best. Many chefs and customers recommend using only coarse salt (like Sal de Ancla) and black pepper to let the natural taste of the USDA Prime beef shine.
How does this compare to other steaks?
It is often compared to the ribeye for flavor and the filet mignon for tenderness. It offers a "best of both worlds" experience at a more economical price, making it an excellent value for high-quality beef.
Can I use this for tacos or fajitas?
Absolutely. Its tenderness and flavor make it a great choice for tacos, fajitas, or stir-fries. Just be sure to slice it thinly against the grain for the best texture.
What is the Beef Checkoff program?
The Beef Checkoff program is a research and promotion program funded by beef producers. It helped fund the research that identified the Flat Iron as a high-value cut, transforming how butchers utilize the shoulder clod.

Very delicious odd cut.
DRDavid R.Verified BuyerWas this helpful? - Rated 5 out of 5 stars1 year agoExcellent flavor - price OK considering...
The flavor is great, and SOUS VIDE makes it perfection. It is just upsetting that not too long ago I could get American Wagyu Rib-eye online for the same price as this per pound... Not only prices are prohibiting nowadays, quality is also down the drain. Choice used to be edible, nowadays Prime is the minimum standard for decent flavored steaks. This cut is great flavor and tenderness wise, and I am glad I found it.

I bought this cut, as I had read the reviews but hadn't tried it before. I made it on my Webber Genesis, and it came out delicious! really enjoyed it. The trick in my case was to not overcook it, and as you can see from the pictures it came out fantastic. I just seasoned it with Sal de Ancla (a coarse salt) and on the grill, it went. Next time I am going to try it on a Cast Iron pan.

The steaks we received were very nice ! The one we ate was tender and flavorful. Packing and shipping were excellent. The one downside for me was the shipping cost. I didnât notice the location of the business. Would be nice to have that more obvious in the advertising . Thanks
