It's common knowledge that guanciale is not easy to come by in the U.S., especially in the Deep South. I made my first purchase from Meat & Bone without preconceived assumptions. Had I set even the highest of expectations, I would still have been more than delighted. My order arrived within 48 hours of submission. Packaging was far more substantial than my expectations, and my guanciale was cool enough that I would have guessed that it came directly from the fridge. This is clearly a business that sets very high expectations for itself. I will definitely continue to be a very happy customer.
