DESCRIPTION
DESCRIPTION

It's hard to find a good short rib but not only have we done this, we've found a GREAT beef short rib plate cut into a size that is manageable (3 bones).
Remember that they are best cooked low and slow. We recommend just adding salt and placing in a slow cooker/smoker/crockpot for 4-8 hours. The meat will fall off the bone.
Sourcing Story: Independent Midwest Farms
Our Short Rib Plate is G1 Certified and sourced from independent farms in the US Midwest. We partner with ranchers who prioritize animal health and refined texture over mass production. Our cattle never exceed 1,050 lbsâa weight that ensures optimal marbling and a buttery, tender eating experience. In an era where commodity steers can weigh over 2,000 lbs, our G1 Certified program stands out for its commitment to quality, responsible sourcing, and traceability.
What Makes Our Beef Short Rib Plate Special?
These short ribs are highly marbled and full of flavor. While they may appear slightly smaller than the oversized plates at your local butcher, this is a direct result of our G1 Certification and meticulous trimming. We remove thick layers of external fat to ensure you are paying for premium meat and deep beefy flavor, not waste.
From a price and value perspective, this product is exceptional. Our short ribs hold their own even when compared against Wagyu short ribs from the best programs in the US, delivering a "brisket on a stick" experience that is perfect for smoking, braising, or slow-cooking.
Comparison: G1 Certified vs. Commodity Short Ribs
- Size & Weight: Our cattle are capped at 1,050 lbs for refined texture, whereas commodity programs often source cattle weighing 2,000+ lbs.
- Trimming: We meticulously trim external fat for maximum marbling and minimal waste; commodity plates often arrive with thick, unrendered fat caps.
- Flavor Profile: G1 Certified beef offers deep, concentrated beef flavor and Wagyu-level tenderness, while larger commodity ribs can lack the same depth of flavor.
- Sourcing: Sourced from independent Midwest farms with transparent standards, unlike mass-market commodity beef.
Freshness & Handling
Your Short Rib Plate arrives vacuum-sealed to lock in freshness and may be delivered frozen for safety and convenience. If frozen, simply thaw in the refrigerator before your low-and-slow cook. This cold-chain management ensures the meat arrives in peak condition, ready to deliver sensational results.
Frequently Asked Questions
What is G1 Certified beef?
G1 Certified beef is sourced from independent farms with strict standards for animal health and weight (capped at 1,050 lbs). This certification ensures superior marbling, tenderness, and responsible sourcing compared to commodity beef programs.
How should I cook these short ribs?
Short ribs are best cooked "low and slow." We recommend smoking, braising, or using a slow cooker/crockpot for 4â8 hours. The meat will become incredibly tender and fall off the bone.
Why are these short ribs smaller than what I see at the butcher?
Our cattle are never allowed to exceed 1,050 lbs to ensure optimal health and refined texture. Commodity cattle can weigh over 2,000 lbs, resulting in larger but often less tender and flavorful plates. We also trim excess external fat to maximize the meat you actually eat.
How do these compare to Wagyu short ribs?
Our G1 Certified short ribs are highly marbled and deliver a deep, beefy flavor that holds its own against Wagyu. Many customers describe the experience as "brisket on a stick" due to the incredible tenderness and richness.
How should I store my short ribs?
If not cooking immediately, keep the vacuum-sealed package in the refrigerator or freezer. If frozen, thaw in the refrigerator before cooking. Once thawed, use within 3â4 days for best quality.
Are there any allergens I should be aware of?
This product contains only beef. It is processed in a facility that may handle other meats, but no additional allergens are added to the short ribs themselves.
What is the best way to season these short ribs?
Because of the high marbling and deep beef flavor, a simple seasoning of salt and pepper is often all you need. You can also use your favorite BBQ rub or marinade if you prefer a more complex flavor profile.
How many people does a 3-bone plate serve?
A 3-bone plate is a manageable size that typically serves 2â3 people, depending on appetite and what sides you are serving. It is an ideal portion for a focused, high-quality meal.

as 60+ years a BBQ aficionado in both cooking and consumption. this rack was the single best BBQ I ever ate. it was a 5.5 hr cook on my smoker to an internal temp of 210 and then a covered foil wrap for 60 minutes after removing from the smoker. when I picked it up from the smoker, one of the ribs actuall fell out....totally clean. would order again but would love it in a 2 bone cut. it's just my wife and I and she doesn't eat beef so I have about 4+ days of this meal. it shrunk up and got very thick and the fat rendered beautifully into the meat. Bark from the dry rub was also perfect.
Also got a "small" kurobota pork rack that I'm excited about. haven't tried it yet. gonna brine that and cook to about 135 but hit it with smoke for the first hour.+ roasting thereafter.
this short rib plate was a BBQ highlight of my eating career. wish these came smaller sizes too.
