Chef-Grade White Fish with the Richness of Tuna
Cobia is one of the best-kept secrets in seafood β a white fish that delivers like tuna, feels like sea bass, and holds up under heat or acid. Itβs naturally rich, firm in texture, and consistently clean thanks to open-ocean farming in high-current environments off the coast of Mexico and the U.S.
This isnβt tank-farmed. Our Cobia is raised in deep, rough waters, resulting in muscular fish with low parasite risk, exceptional structure, and none of the muddy or murky flavors found in lower-tier aquaculture. The result? A versatile, best-in-class white fish that chefs love β and one thatβs safe and ideal for raw preparations like ceviche.
Sourcing Story: Raised in the Open Ocean
Unlike traditional aquaculture that relies on stagnant tanks or crowded pens, our Cobia is farmed in the dynamic, high-current waters of the open ocean off the coasts of Mexico and the United States. This environment forces the fish to swim constantly, developing dense, muscular flesh and a clean, non-muddy flavor profile.
This method ensures a sustainable, traceable product with zero bycatch and no overfishing. The high-current environment also naturally reduces parasite risk, making this Cobia one of the safest white fish options for raw preparations like crudo, sashimi, and ceviche.
How It Compares to Other White Fish
- Texture: Firmer than Halibut or Snapper, with a steak-like bite that doesn't fall apart on the grill.
- Flavor: Cleaner and richer than Tilapia or Catfish, with none of the "earthy" or "muddy" notes associated with tank-farmed fish.
- Versatility: More adaptable than Sea Bass, holding up equally well to high-heat searing, roasting, and raw marination.
- Safety: Lower parasite risk than many wild-caught white fish, making it a preferred choice for chefs serving raw preparations.
Key Benefits
- Firm and flaky β cooks like a steak, flakes like sea bass
- Naturally high in fat β perfect for searing, grilling, or eating raw
- Ocean-farmed in rough water β stronger muscle, better flavor, lower risk
- Sustainable and traceable β zero bycatch, no overfishing
- Parasite-resistant β excellent for crudo, ceviche, or sashimi
- Consistent sizing and yield β ideal for chefs and portion control
How to Use It Like a Pro
- Grill It: Holds up better than halibut or snapper. Oil lightly, salt, and grill hot.
- Sear It: Sear like tuna or swordfish, finish with a citrus-butter baste.
- Serve It Raw: Crudo with lime zest and olive oil; or torch the edges for texture.
- Roast It: Top with miso, soy, or chimichurri. High oil content keeps it moist.

This was an experiment. I'd never heard of cobia, so I decided to try it. Very firm and good mild flavor! I did notice in the middle, where it wasn't as well cooked as the rest (I didn't want to risk drying it out), it was a little tough. So now I know!

The Cobia filets were as promised. I used olive oil then sprinkled salt, pepper & garlic powder. Pre heated the air fryer to 400Β° then cooked the filets for 6 minutes on each side. Delicious, served with rice, steamed green beans & salad.
