Why BMS 6-7?

While your Picanha will be high-quality and well-marbled, it may not look identical to a Ribeye of the same grade. How to Cook Your Picanha
The Picanha is forgiving and flavorful. Follow these steps for the best results:

I ordered a 4 lb wagyu picanha for delivery to a buddy 10 days before Christmas. As the order was prepped I was given an estimated delivery date. The day before it shipped my buddy was notified and the roast was delivered the following day.

I’ll start by saying this continues to be one of the best cuts I’ve ever tasted and beats any restaurant picanha I’ve ever ordered. This was my second time ordering this cut, first time I purchased the medium 2-3 LB and this time went with a large 3-4 LB. The first time I received a full 3 LB cut as a medium size and maybe just got lucky. This time, the large was 3 LB 5.2 oz (see photo) and that’s with relatively thick/heavy vacu seal plastic. Feels like I paid $22 more for a few ounces of meat, so be warned if buying larger quantities. You might be better off buying 2 medium cuts than a larger one, but you sure will enjoy it still!
