The cut was succulent. Sous vide it the seared it like a ribeye. Atfer letting it rest, I drizzled some reduced balsamic, wine and caramelized fig sauce on it. One word to describe it
“BAD *** PORK”! Oops! That was 3 words. That’s how good it was. Will buy it again.

This was ridiculous! Everyone raved about the flavor. So much marbling makes it incredibly rich. Only thing I didn’t like is the uneven thickness of the cut. Parts of it are either overcooked or not quite up to temp. Definitely buying again.
