Exotic, Lean, and Exceptionally Tender
Domestic Alligator Tenderloin offers a unique culinary adventure for the adventurous home cook. Sourced from the tail of alligators raised on family-owned freshwater farms in Louisiana, this cut is the most tender part of the animal. Nearly white in color and virtually fat-free, it delivers a delicate, mild flavor often compared to chicken but with distinct nuances reminiscent of frog legs or turtle.
High in protein and low in cholesterol, this lean meat is a healthy choice that adapts beautifully to various cooking methods. It readily absorbs marinades and seasonings, making it a perfect canvas for both bold Creole spices and subtle herb blends. Whether you’re preparing a classic gumbo, grilling for a cookout, or trying a "mystery meat" dinner, alligator tenderloin rewards experimentation.

Chef’s Tips for Cooking Alligator
Alligator meat is lean and can become tough if overcooked. Follow these guidelines for the best results:
- Marinate for Flavor: Alligator takes on flavors well. Try a simple marinade of lemon juice, garlic, and herbs, or use your favorite Creole seasoning.
- High Heat, Short Time: Grill, pan-sear, or fry over high heat. Cook quickly until the meat is just white all the way through.
- Avoid Overcooking: This is the most important rule. Once the meat turns white, it is done. Overcooking will result in a chewy texture.
- Slice Against the Grain: After resting for a few minutes, slice against the grain to maximize tenderness.

My wife has been bugging me to get some alligator and cook it for her. I like alligator, but it is not a favorite of mine. This however was off the charts good. Don't even have to heat up the leftover. Cut into cubes about 1 inch. Marinated it in a ginger, sesame, balsamic vinegaret, then blackened them. Cooked at 600 degrees on the grill for 3 minutes. Tender and juicy.
