Hanger Steak | G1 Certified

The Butcher's Best Kept Secret

The hanger steak is a rare gem in the world of beef. Sourced from the muscle that supports the diaphragm between the cow's rib and loin, this cut "hangs" freely, resulting in a texture that is surprisingly tender and a flavor profile that is deeply beefy. Often called the "butcher's steak," it offers the best of both worlds: the tenderness of a filet mignon with the rich, savory depth of a ribeye.

Its exclusivity is unmatched. There is only one hanger steak per animal. A 1,200-pound steer that yields 800 pounds of beef produces just a single 16–32 ounce hanger steak. This makes it even rarer than the tenderloin and a true discovery for the home cook.

Sourcing & Quality

Our Hanger Steaks are G1 Certified USDA Choice, placing them in the top 5% of Choice beef. Sourced from trusted partners in the US Midwest, these steaks undergo a rigorous 45+ day aging process. This extended aging breaks down connective tissue, ensuring exceptional tenderness and concentrating the natural beef flavors.

Cooking the Perfect Hanger Steak

Because of its unique texture, the hanger steak requires a bit of finesse. It is best cooked to medium-rare or medium. If cooked too rare, the texture can be slightly slimy; if overcooked, it loses its signature tenderness.

  • Best Methods: Grilling or Pan-Searing
  • Recommended Doneness: Medium-Rare to Medium
  • Preparation Tip: Always slice against the grain to maximize tenderness.

Frequently Asked Questions

What makes Hanger Steak different from other cuts?

Hanger steak is known for its intense beefy flavor and tender texture, often compared to a mix of filet mignon and ribeye. It is also incredibly rare, with only one cut available per animal.

How should I cook Hanger Steak?

We recommend grilling or pan-searing to medium-rare or medium. Avoid overcooking, as this can make the steak tough. Always let it rest for 5–10 minutes and slice against the grain.

Where is this beef sourced from?

Our Hanger Steaks are G1 Certified USDA Choice beef sourced from the US Midwest. They are aged for 45+ days to ensure superior tenderness and flavor.

Is this steak delivered fresh or frozen?

Depending on your location and shipping method, this item may arrive frozen. It is packaged with dry ice to maintain quality during transit.

How should I store Hanger Steak?

If arriving frozen, keep it in the freezer until ready to use. If fresh, store in the coldest part of your refrigerator and use within 2–3 days. For best results, thaw frozen steaks in the refrigerator for 24 hours before cooking.

What is the best way to slice Hanger Steak?

Hanger steak has a distinct grain. For the most tender bite, always slice the meat against the grain after it has rested.

Is Hanger Steak suitable for marinating?

Yes! Because of its rich flavor, it pairs beautifully with bold marinades like chimichurri, garlic-herb butter, or a Brazilian-style steakhouse marinade.

What is G1 Certified USDA Choice?

G1 Certification ensures that the beef meets strict quality standards, placing it in the top 5% of USDA Choice beef for marbling, maturity, and overall quality.

    Dinner Tonight: Hanger Steak

Dinner Tonight: Hanger Steak & egg with arugula + Homemade Chimichurri

Cooked up a hanger steak tonight—wow, it turned out amazing. Let it marinate for 4 hours in a Brazilian steakhouse-style marinade. Then seared it in the pan then finished in the oven at 400 perfectly medium.

    My Chimichurri Sauce

    ½ cup extra-virgin olive oil

    4 tablespoons red wine vinegar

    4 garlic cloves, minced

    ½ teaspoon sea salt

Freshly ground black pepper, to taste

    1 teaspoon dried oregano

    ¼ cup fresh chives

    ½ teaspoon red pepper flakes

1 cup finely chopped fresh flat-leaf parsley

    Juice of ½ lime

    4 tablespoons hot water

Blend until smooth. Bright, bold, and just the right amount of heat—perfect over that steak.

    Great steak

Delicious steak. I Souve Vide the steak for 45 minutes at 130 degrees, and then reverse seared in a skillet. Absolutely delicious.

    Hangar Steak YUM

It's the best of both worlds, nicely tender almost as much as a filet, with the meaty yummy flavor of a rib eye.

    Great hanger steak

This steak was delicious. Grilled on charcoal to medium rare, it was beefy and tender. This cut has great value and isn't too fatty. I'll definitely get it again.
