Provoleta is the ultimate sharing appetizer. It is an 8oz disc of dried provolone cheese that holds its shape when cooked. Traditionally it is seasoned with chimichurri, oils or spices, then topped with chilli and/or oregano and eaten communally with bread.
Many provoletas found stateside come seasoned, which we think is a horrible idea. Half the fun of eating provoleta is trying different toppings, experimenting with different cooking methods which is why we chose to dry our own cheese and make our own Provoleta which we sell unseasoned, of course.
How To Cook Provoleta Cheese
Cook your dried provolone cheese by placing it directly on the grill. We recommend a small plate or cast iron (like the one in the picture, which is NOT included) but it is not required. You want to cook the provoleta until it melts just enough to be eaten with bread.

One of my favorite cheeses
For years I bought provoletta during trips to Miami. I’m happy I’m able to buy it shipped to my home in the Midwest. Fantastic cheese!

Amazing giant hunks of cheese
It was super easy to order and everything was delivered timely and really well packaged with dry ice and cold packs. Great communication too. I ordered a bunch of the provoletta wheels for a party and they were just like the ones I had in Argentina. Really good quality, tasty giant hunks of cheese that we crisped up on the bbq.
