For the last 60 days we have been secretly dry-aging these beautiful USDA Prime Bone-In Ribeyes with one of the finest rums in the world: Diplomatico.
Our Diplomatico 60-Day dry aged steaks are one of a kind. As far as we know we are the ONLY butcher in the US doing something like this.
These steaks are very nice, between 19-21 ounces. The bone has NOT been frenched, because there is nothing like eating the meat that sits next to the bone.
This is a LIMITED edition product and is sold on a first come first serve basis.
Expectations? This should be a very nice and tender steak. The aged flavor should be relatively strong and you should be able to feel the sweetness of the rum.
Why Diplomatico? The Reserva Exclusiva is an elegant and complex sipping rum. It has notes of maple syrup, orange peel, brown sugar and liquorice. It is delicately distilled in ancient copper pot stills and aged in oak for up to 12 years.

Awesome steak
Solid flavor and texture, probably one of my favorite iv ever had, the smell of the raw meat was sweet and nutty i wanted to just eat it like that

Huge flavor Ribeye!
This was outstanding! Amazing marbling and I was completely amazed that I could taste the rum in it! Awesome customer service also! Checked on me to see how I enjoyed the order!

Best steak ever, regardless of cut, venue, or country
My pursuit of the perfect steak took me to several countries across continents over the span of decades. I've also tried many meat purveyors grilling at home and always felt something better could still be had.
Ironically, my search ended with a rather local outfit, upon which I stumbled entirely by chance.
This particular cut is incredible. Not sure however what the rum does to it, or even how it's imparting any benefits given the meat is dry—and not wet—aged. I did notice a very faint scent of rum when removing the meat from its vacuum packaging. Having said this, let me reiterate—the meat is just fantastic. It's extremely tender, savory, presents deep notes of aging, and grilled over charcoal it is what I've been looking for all this time.
I have arrived.
