I wanted to love this but I'm pretty disappointed.
I ordered a 4-5 lb piece which weighed in at 4.25 lbs. However, the side towards the outside of the slab didn't have much meat. I took a photo of the cross-section for reference. After trimming my yield was:
2.25 lbs (50%~) of the slab was fit for making bacon
1 lbs of various trim for frying up
and 1 lb of what was basically a mini slab of fat that was over an inch thick (this doesn't include the fat layer I left on the meat!)
which seems pretty poor for what's supposed to be a premium product. I would not recommend this sadly.
I gave 1 star since the quality of the meat itself was good, though not worth the price point after factoring in the trim
