These are graded BMS 6-7, but honestly, by looking at them you would think is Japanese A5 beef. This is how good and marbled these can be. We source them from a very high-end and boutique Australian Wagyu program.
Short Rib is one of the most flavorful steaks in the steer. Extremely marbled and tender. Cooked properly, these ribs could run for the most flavorful cut of beef in a steer.
While ideal for braising, they can be cooked in many different ways. You can cook them with indirect heat, smoke them or cut them into small steaks and grill them quickly over high heat (however they will be chewy... It's a short rib, after all, go for Denver steaks if this is what you desire).
This roast is spectacular, but it does require a little bit of cleaning as it may have some silver skin. That said, it cant be beaten from a price/value perspective. There is very little of it to trim and this is all pure delicious short-rib beef.
