For our South American friends, this is as close as you can get to a "costillar" in the US. These meaty Back Ribs are what’s left when we cut and trim our rib roasts. 

Note: Our beef back Rib is now single package, instead of buying 2 racks you can now buy one rack at a time. Price has remained the same but adjusted to reflect only one rack.

 

WHY IS OUR DOMESTIC WAGYU BEST IN CLASS?

We work with what we consider to be the best Wagyu program in the US. This program processes a small amount of steers every week (140-175) which allows them to put care into every steer. These beef back ribs come from a mid sized family owned company that puts a lot of care into each cut.

We have compared this program to others from major chains and stores, and we find that it consistently tastes better and eats better. This may be because these animals are fed for longer and at a slower phase than what you will find with other wagyu brands. The genetics of their animals are superior as well they’re very selective with the bulls they use from Japan (Japanese Kuroge Tajima bull).

Perfect for low and slow smoke...

I tried these bad boys two weeks in a row. Most recently I smoked two racks for six adult guests. Smoked them on Masterbuilt Smokehouse (I know, I know) for 8 hours at 225 (last four hours in oven safe plastic bag to retain moisture). The ribs were great, and we had very little in the way of leftovers. Great quality of marbling.

These ribs are a crowd pleaser

There's not a lot of meat on the ribs but you have to expect that. It's all about the flavor. I do mine Texas style with a nice beef rub smoked with post oak. This rack was smoked for three hours at 250 (fast cook this time).

Really good

First wagyu I've cooked, and it was really impressive and buttery. Around 5 hours at 250 on your smoker with your favorite rub.
