It was shipped fast arriving still frozen packaged very well. The taste of the product was amazing.
Smoked Shoulder
This 3lb shoulder was perfect. I salt dry brined it for 24 hours then added olive oil and herbs before smoking it at 250 for several hours. Tender not dry. There is indeed a difference in flavor of American lamb versus Australian. It was less gamey. I appreciate the promptness of the delivery as well. Here is a post cook pic.

LAMB SHOULDER BONED ROLLED & TIED
THE MEAT WAS EXCELLENT. I JUST WISH MORE OF THE INSIDE FAT WAS TRIMMED AWAY. I HAD IT ON THE SPIT FOR 5 HOURS, IT WAS COOKED PERFECTLY BUT LARGE THICK FAT LAYERS HAD TO BE TRIMMED AWAY BEFORE SERVING.
