Great Meat, Bad Value
Invested in this 20lb Wagyu Brisket for a family BBQ. Had always done Prime Brisket in the past and was looking to level up for this cook. I'll start with the good. It came out awesome. The meat was nicely marbled and the fat rendered amazingly. It was a slight notch above the past briskets I've done. All the guests enjoyed it very much. Now the bad, at $285 for a 20lb brisket you are already paying a premium. This was aggravated by the fact that this particular brisket I received required around 9lbs of fat trimmed off. Trust me that I did not over trim this brisket. I left about a quarter inch on the fat side and if anything, I left more deckle fat than I usually do. Every brisket needs 2-5 lbs of trimming but this was excessive. Not sure if it was just the brisket I received or if all the BMS 7's are like that. Wagyu means nice fat. We all know that. But it's fat that is nicely marbled into the meat, not an inch thick inedible layer surrounding the meat. On the bright side, I was able to make some really nice, expensive beef tallow.
Meat N' Bone
The average yield of a PACKERS brisket is 50%, at 9lb of trim, you are actually beating the average. There will be briskets with more and with less... but this is the industry-wide average.
