This is a high quality brisket. But it is "packer style", meaning you will have to do some trimming and cleaning.
Now... here is a secret most butchers will nto tell you. When it comes to Brisket, it makes little difference whether you are buying prime or choice. As long as its high quality.. it will be fine. In fact, our briskets are a mixed bag.. you may get prime or you may get choice... they are all so good we GUARANTEE you will not know the difference... and we are not charging you USDA Prime prices for it.
That is because beef is graded primarily on the marbling of the ribeye between the twelfth and thirteenth rib bones. Since the inspectors are basing their decision on a cut from a different part of the animal, there’s no guarantee the brisket will be marbled in the same way. Since all of our beef is high quality from high quality animals... it is guaranteed to be a great brisket.
Do note... it is brisket after all and will require to be cooked with love and care, meaning, slowly over at least a couple hours.
