This is a high quality brisket. But it is "packer style", meaning you will have to do some trimming and cleaning. This is the kind of Brisket you take to a competition (and a lot of our customers do)... it has beautiful marbling, has been wet aged for 30 days and is just great.. now you may be accused of cheating because it is THAT tender.

Do note... it is brisket after all and will require to be cooked with love and care, meaning, slowly over at least a couple hours.

 

WHY WEIGHTS RANGES?

Brisket is not a steak.. meaning, we don't get to trim it and cut it to an exact weight (we could, but it would just drive price up). Each steer will be different and its Brisket will be of a size... because we sell online at pre-determined prices we have divided the Briskets in weight ranges. We price them to the lower end of the weight range... so if its a 10-13 lb, we are pricing it at 10 lbs. So while you may be getting the smaller end of the weight, range... you are still getting what you paid for.

Overall very good

This was a very good brisket. Shipping was exceptional and both cuts came to the house frozen solid. While doing the trim the fat was melting in my hands. I got the 16-19 pounder and it was at the top of the weight range. Trim was about 6 pounds and while normal I wish I could have cut less since it was Wagyu but no worries. Fat between the flat and point was less than expected and nice and white. My only complaint was that the flat was very thin. 1" or less across the entire flat hence the 4 stars. Would go 4.5 if I could. Most flats I've had were 2" to 4". This worried me about it being tough and dry but it wasn't in the least. Did a 15.5 hour smoke on a RecTeq RT-680 starting at 215 degrees. Started an apple juice/vinegar spritz at 4 hours and wrapped it in foil at 7 hours and 168 degrees. Brought it in the house and finished it in a 275 degree oven to 203 internal temperature. Rested for 1.5 hours in a double towel wrap. The carve was awesome. Great yield. Pull and bend were exceptional. As we say here in SC, it was meat candy.

I am a semi-pro cooker and am opening my first BBQ shack in the Blue Ridge mountains next spring.

I would highly recommend MEAT N' BONE for online specialty meats and if you are in S. Florida I would make them your butcher.
