    This picanha weighs 3 lbs BEFORE cooking, though the total weight may decrease during the cooking process.

    We work with what we consider to be the best programs in the US. These programs process a small number of steers each week, allowing them to care for each steer meticulously. Our Picanhas come from mid-sized family-owned companies that put a lot of care into each cut.

    We have compared these programs to others from major chains and stores, and we find that our Picanhas consistently taste better and eat better. This may be because these animals are fed for longer and at a slower pace than what you will find with other brands. The genetics of their animals are superior as well, being very selective with the bulls they use from Japan for Wagyu and the best breeds for G1 Certified and Prime cuts.

    G1 Certified, Prime, and Wagyu BMS 8-9? How Does That Work?

    Picanha is graded based on the marbling and quality of the steer. Whether it's G1 Certified, Prime, or Wagyu BMS 8-9, each grade promises high quality and superior marbling, enhancing tenderness and flavor. While Wagyu BMS 8-9 Picanha offers the most intense marbling, our G1 Certified and Prime Picanhas also deliver exceptional taste and texture.

    Do note that marbling is not the sole indicator of tenderness, hence not all beef graded "Prime" is equal.

    Customizable to Your Taste

    Our Picanha is not seasoned on purpose, allowing you to finish it your way and ensuring it is suitable for those with allergies. Feel free to add any of our finishing salts, sauces, or butters to enhance the flavor to your liking.

     

    How to Enjoy Your Pre-Cooked Picanha

    No Grill or Cooking Skills Required:

    1. From Cold, Thaw it Out: Remove your Picanha from the freezer and let it thaw in the refrigerator for 24 hours. If you're in a hurry, place the vacuum-sealed package in cold water for a quicker thaw, ensuring it is fully defrosted before cooking.

    2. Get Ready: Take your thawed Picanha out of the fridge, letting it sit for about 30-60 minutes to reach room temperature. This helps it reheat more evenly.

    3. Sear It: Heat a skillet or grill to high heat. Place the Picanha fat-side down and sear for 2-3 minutes until the fat cap crisps up beautifully. Flip and sear the other side for 1-2 minutes.

    4. Warm It Up: Lower the heat and continue to warm the Picanha for another 5-10 minutes, depending on your preferred level of doneness. Use a meat thermometer to check the internal temperature – you’re aiming for 130°F for medium-rare.

    5. Rest Up: Let the Picanha rest for about 5 minutes. This locks in the juices, making sure every slice is moist and flavorful.

    6. Slice it Up: Slice against the grain into steaks or thin slices, whichever you prefer. Each slice is packed with flavor and ready to be savored.

    Pairs well with: Mashed Potatoes, Rice and fries.

    Shelf Life

    Because our Picanha is carefully prepared and pasteurized, it has an extended shelf life. Here are the details:

    • Refrigerated: Up to 2 weeks if kept unopened in the original vacuum-sealed packaging.

    • Frozen: Up to 6 months if kept in the freezer in the original vacuum-sealed packaging.

    This extended shelf life ensures you can enjoy the convenience of having high-quality Picanha ready to be finished and served at any time.
