Economical, tender, delicious... The Flat Iron steak may be the best cut of beef to grill, heck it may be the best cut overall.
This relatively unknown cut of beef (although gaining popularity) is the result of research by teams from the University of Florida and the University of Nebraska as part of the Beef Checkoff program. The goal was to look for additional opportunities to add value to beef through development of new beef cuts... clearly, they succeeded.
Flat Iron steaks are beautiful to look at, they have an appealing texture and a decent amount of marbling.
The flat iron might not get nearly as much attention as rib-eyes and strips, but it’s a quality cut of meat, lean and usually inexpensive enough for a nice weeknight dinner.
Grill it like a skirt (some higher end restaurants actually sell it as "churrasco") or braise it. You CANNOT go wrong with a Flat Iron Steak.

The flavor is great, and SOUS VIDE makes it perfection. It is just upsetting that not too long ago I could get American Wagyu Rib-eye online for the same price as this per pound... Not only prices are prohibiting nowadays, quality is also down the drain. Choice used to be edible, nowadays Prime is the minimum standard for decent flavored steaks. This cut is great flavor and tenderness wise, and I am glad I found it.

I bought this cut, as I had read the reviews but hadn't tried it before. I made it on my Webber Genesis, and it came out delicious! really enjoyed it. The trick in my case was to not overcook it, and as you can see from the pictures it came out fantastic. I just seasoned it with Sal de Ancla (a coarse salt) and on the grill, it went. Next time I am going to try it on a Cast Iron pan.
This was excellent! Made it on the grill with just salt, pepper and garlic powder. Cooked to medium.....great
Just grilled my flat iron steak and it was amazing. It's so tender that l could actually cut it with a fork.excellent taste and marbling. I definitely will be ordering again.

It was great, awesome flavor and texture. Juicy and very delicious. Overall a great steak for a lesser known cut.
Seasoned with only SPG and some Mediterranean herbs, smoked it and it came out great. It was tender as we sliced it thin, just the right size for the 2 of us. I will be ordering more.
