We source Stone Crab from local fisherman. Our availability to fulfill orders will depend on availability of crab. Orders placed with advance notice will most likely be fulfilled in time.
We require Stone Crab orders to be placed at-least 24 hours ahead of requested delivery.
If you live outside of Florida your stone crab will ship in vacuum sealed pouches, frozen. If you require fresh claws, please contact us.
Stone Crab: Savory and Sustainable
Stone Crab is delicious, in our opinion it is the most delicious of all crabs. The claws are large and full of flavor. Stone Crab is tender, has a very low level of fats and it offers a very interesting tasting experience.
All of the stone crab claws on the market come from wild fisheries, which makes the product truly natural, but what truly makes it special is that no crabs are killed in the process of harvesting their claws. That is because Stone Crabs easily lose their limbs to escape from predators or tight spaces, but their limbs will grow back. When a claw is broken such that the diaphragm at the body/claw joint is left intact, the wound will quickly heal itself. When fishermen harvest Stone Crab they grab only a single crab, which provides the crab with a much better chance of survival when it is returned and helps ensure the long-term sustainability of the species.
Where Do You We Source Stone Crab From?
We have partnered with a group of Fishermen that go out every day during Stone Crab Season (Oct. 15 – May 15) and bring about 4,000 pounds of claw every day. We then cook, sort, pack and deliver the stones to your door.
Our claws are fresher than anything you will find in the supermarket or restaurant... and also a lot less expensive.
How Much Stone Crab Should I Buy?
Stone Crab is best served as an appetizer. 1lb - 1.5 lbs per person is the ideal serving. If you want to serve Stone Crab as an entree you may need over 3 lbs per person.
Two and a half pounds of prepared crab claws will typically equal one pound of meat.
What Size Of Claws Should I Buy?
From a price/value perspective, smaller claws will offer a slightly better value. However, that also means you will be spending more time shelling them than eating them... which is why a lot of our customer prefer larger claws. In terms of flavor... its the same.
Do note Crabs are living animals, our team does the best they can to sort the claws based on size and weight... but it is not a perfect science.
What's The Shelf Life Of Stone Crab?
Stone Crab is best consumed fresh, however, un-cracked claws will last in the refrigerator for up to 7 days. If you do freeze un-cracked claws they will be good for up to 6 months.
Cracked Claws will become dry and lose their amazing flavor.
Why Is Stone Crab Expensive?
Each fisherman is required to pay state fees for a specific permit and each trap has a corresponding tag that requires additional state fees, therefore the cost to local fishermen is extremely expensive when catching the crabs. Then there are the additional costs of fuel, bait and maintenance. Most fishermen work 12-hour days that typically begin before sunset.
