Description of Hanger Steak | Intoku Grandmaster Akaushi Beef

The hanger steak is considered a butcher's best-kept secret. It comes from the muscle that helps support the diaphragm between a cow’s rib and loin. It's just sort of "hanging there" and it does absolutely nothing resulting in one of the most tender steaks.

There is only ONE hanger steak per animal. So a 1,200 pound animal that yields 800 of beef only has one hanger steak of about 16-32 ounces making it a rare gem.

Cook it any way you like, but do not overcook it. You are looking for a nice medium. The hanger is a bit tricky, too rare and it will be a bit slimy, too cooked and it will lose its tenderness.

This is Grandmaster Akaushi Beefpremium American Wagyu or Wagyu Cross F1 which is produced from cattle that are between 24 and 30 months of age, with minimum feeding of 300 days. All cuts are wet aged for a period of 30 days.

Moist aging helps these cuts in preserving moisture (each steak is wet-aged in a bag). With NO hormones or antibiotics, these steaks are high in monounsaturated fats and Oleic Acid, as well as having a BMS7+ marbling score. They are DNA verified for individual pedigree.

    THE INTOKU WAY

INTOKU is at the forefront of a culinary revolution, seeking to unlock the full potential of the exquisite flavor profile of the Wagyu Akaushi Full Blood breed. Through a meticulous selection process, INTOKU identifies only the most exceptional phenotypes and genotypes, and implements a continuous improvement program that encompasses all aspects of raising and feeding the cows.

The result is a wide range of nuanced flavors, achieved through a careful combination of both dry and wet aging processes. By elevating the meat industry to new heights of excellence, INTOKU is setting a new standard for the art and science of gourmet cuisine.

Intoku is a multi-cultural experience, borrowing aspects from three distinct cultures: Japan (Breed), Europe (Aging Method), America (Production).

      Beefy flavor; tender cut

Hanger is one of the best cuts from a cow - and the Intoku Grandmaster Akaushi is one of the best cows. Even so, this was unexpectedly delicious! It's now part of our standard cooking rotation (not just special occasions).
