This delicious cheese comes from the beautiful country of Spain, particularly from La Mancha. It is "artisanal", made from the milk of the Manchega breed of cheese and aged for over a year.
The cheese presents a firm and compact consistency and a buttery texture, and often contains small, unevenly distributed air pockets. It has a distinctive flavour, well developed but not too strong, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheep's milk.
