Cooked this for my family. Did it in my sous vide at 125F for a rare cook, rubbed with a mustard herb butter, and finished it on the grill. It was a hit among me and my family. The venison turned out fantastic, extremely tender and flavorful.
I never had venison before, much less venison filet mignon. These....were so damn good. I cooked them sous vide at 135F for 2 hours, then seared them using a Bernzomatic TS4000 torch. Seasoned only with kosher salt, cracked black pepper and garlic powder. Everyone at the cookout loved the slices as they were served. These lasted about 3 minutes before they were gone.
The venison was incredible! I slow n seared it and served it on top of cabbage carrots and pancetta with a home made chocolate wine sauce. Could not have come out any better, I’m so happy I can get such great tasting venison delivered to my house!
